Taco Salad, an Expose

Ok, our favorite meal is taco salad, hands down. And, because we are awesome, we are going to share that meal with you.






First you take your veggie ground round, we use chick'n flavor. Saute with some onion, add taco seasoning. We use the hot, spicy one. Simmer 'til thickened. Set aside.








Finely mince 3 thin slices of onion, add to large salad bowl. Then wash box of cherry tomatoes and cut in either half or quarters. Add to bowl.







Tear and wash either lettuce or spinach, we use spinach. Add to bowl. Crush bag of baked scoops and add to bowl. Grate soy cheese, one block, and add to bowl. Toss till well mixed.








Open jar of salsa and Tofutti sour cream, and you're ready to serve. We do this in a very specific way. You put some of the salad on your plate, then put some of the ground chick'in on top with some sour cream and salsa. Eat and enjoy!!!

    Thanks for the recipe! I'm always looking for new tofu recipes, as I have only a handful and sometimes seem to be doing them to death! We use tofu in our tacos now (Yes! Dan...die-hard Texan that he is...actually loves tofu tacos -- I think Texas may call and ask him to return his cowboy boots and hat!)...but somehow never thought of doing a taco salad...duh! Thanks again...you guys rock!!!

    Hey, lady, glad we could help. If you want more good ideas for tofu check out the 'fat-free vegan' site. You don't need the fat-free part, but really good ideas there.
